Maple Walnut Bread and Apple Butter
This is a great bread recipe that I found online and modified a little bit. It has excellent flavor and a very soft texture. You can bake it longer if you want it to have a harder crust. The apple butter is a phenomenal pairing, and adds a little sweetness. You can toast the walnuts if you like to add a bit more flavor, and you can also sub walnut oil for the olive oil, but it's not necessary.
- 5 cups whole wheat flour
- 3 tbsp olive oil (you can use walnut oil if you want more walnut flavor)
- 3 tbsp maple syrup
- 1 tbsp salt
- 1 packet active dry yeast
- A generous handful of chopped walnuts
- Activate the yeast in 2 cups of 105 degree water with a pinch of sugar. Give it five minutes to make sure your yeast is foaming and alive.
- Mix in oil, maple syrup, and salt.
- Add flour a cup at a time and keep stirring to form the dough.
- Take the dough out of the bowl and knead it a few times on a floured surface. It should be slightly sticky. Divide the dough into two halves, rub with oil, cover loosely, and let rise for an hour.
- Bring the risen dough to a floured work surface and begin kneading walnut pieces into the bread.
- Roll out into 2 long skinny loaves, gash the tops with a knife, and bake at 425 degrees for ~18 minutes. tap bread to test doneness. It should have a hard knock.
Now, for the apple butter.
- 1 cup unsalted butter, softened
- 2 tbsp honey
- 1/2 tsp cinnamon
- 1-2 powdered apples
I bought a few bags of apple chips at the store and ground them up in my food processor. You are probably going to have to play with it to get something that works. You can add the honey and cinnamon, and whip it all together, then add a portion of the apple, whip, taste, and continue adding apple until you like where the flavor is.
Now put them together and enjoy your tasty food!
